Marshmallows - but make them healthy
Healthy marshmallows say whattttt?! Honestly these little treats are so simple with 5 ingredients & no extra junk like you may find in the ultra-processed, store-bought mallows. They are easy to prepare and yummy for you and the entire family to enjoy.
Ingredients:
- 1 cup of warm water
- 3/4 cup beef gelatin
- 1 cup of honey
- 1/4 tsp of sea salt
- 2 tsp of vanilla extract
Directions:
1) Pour 1/2 cup of warm water into a mixing bowl
2) Add beef gelatin to mixing bowl and stir contents
3) Let sit for 5-6 minutes
4) While beef gelatin and water are sitting, add the remaining 1/2 water to a small saucepan with honey and salt
5) Bring to a boil, constantly mixing
6) Turn on mixer that contains your water and gelatin - do this at a medium speed (you can do this with a hand mixer as well, just be cautious in the following steps)
7) Slowly add the honey/ water / salt mixture to the bowl while continuing to mix
8) Add the vanilla extract to the mixture
9) You are going to continue to mix for around 15-20 minutes - you will see the mixture begin to change color, getting lighter as more time passes / mix until it becomes stiffer and begins to form peaks
10) Cover a 13x9in pan with parchment paper
11) Add the marshmallow mix to the pan and let sit for 5 hours (at least) the longer you wait, the better! (overnight is best)
12) Cut into desired squares and enjoy!
