no-egg breakfast hash
One of my favorite go-to breakfast hashes that is so simple and so yummy. I started making this one when I began to incorporate more protein to my morning meals. It is a combination of a few of my favorite foods that all compliment each other so well. If you are looking to meal prep, it is also a great option to make in larger quantities and set your week up for success. Delicious + Simple.
No-Egg Breakfast Hash
- 1 lb ground beef
- 1 medium sized sweet potato or purple sweet potato
- 1 medium sized golden potato
- 2-4 garlic cloves
- 1/2 yellow onion
- Avocado
- Oil of choice (I prefer avocado oil)
Directions
1) Chop up yellow onion and garlic 2) Heat skillet and add oil of choice (I prefer using avocado oil) 3) Add in yellow onion and garlic and cook until fragrant 4) While onion and garlic is cooking, chop potatoes into small cubes 5) Add potatoes to skillet and season with salt and pepper 6) To soften potatoes faster, you may add a small amount of water to the skillet causing steam to form and cover the pan - alternatively you can soften in the microwave prior to cutting and placing in the skillet (much faster if you are on more of a time crunch) 7) Once potatoes are soft, add in ground beef, cooking until meat is browned 8) Remove from heat and top any of your favorite additions! I love adding avocado & bitchin chipotle sauce - green salsa is great also. Enjoy!
